​​​​Le valli di Comacchio sono sempre state l'habitat ideale per l'anguilla, un pesce oceanico che vive nell'acqua dolce come pure nell'acqua salata e che in autunno affronta un lungo e insidioso viaggio per raggiungere il mar dei Sargassi dove si riproduce. Quella dell'anguilla è una delle migrazioni più sorprendenti nel regno animale ed è l'unico pesce allevato di cui non sia ancora possibile la riproduzione controllata.
Per secoli è stato il cibo fondamentale degli abitanti di Comacchio che con una marinatura di antica tradizione hanno potuto mantenerne inalterate le proprietà nutrizionali e favorirne il commercio.
La pesca dell'anguilla a Comacchio è citata da scrittori romani come Plinio e Silvio Italico e vi è notizia di banchetti presso la corte Estense con portate a base di anguilla.
Da un testo pubblicato nel 1761 da un medico locale, il dottor Francesco Bonaveri, è evidente che l'anguilla fu un'importante fonte di rimedi terapeutici, una vera e propria panacea per la salute con un rituale da seguire e una corretta posologia.

​The Comacchio valleys have always been the ideal habitat for eel, an oceanic fish that lives in sweet water as well as in salt water and in autumn faces a long and treacherous journey to reach the Sargassi Sea where it goes to reproduce.
Eel's is one of the most amazing migrations in the animal kingdom and is the only bred fish whose control is not yet possible.
For centuries it has been the basic food for the inhabitants of Comacchio who have managed to treat it with marinade according to an ancient tradition to maintain its nutritional properties unchanged and then favor its trade.
The fishing of eel in Comacchio is cited by Roman writers such as Plinio and Silvio Italico and there is news of banquets at the Estensi court with courses of eel.
From a test published in 1761 by a local doctor, Dr. Francesco Bonaveri, it is apparent that eel was an important source of therapeutic remedies, a real panacea for health with ritual to follow and proper posology.
